Bon Appetit Pasta with Sun Gold Tomatoes




Weeknights in my house can quickly turn into chaos. My two boys are both at ages where they want my attention at all times, making dinner time a family activity. The older of my two boys loves to cook with me and we have math lessons while we measure out the ingredients. I try to make at least one meal a week which is quick and easy and use it as a learning tool for my two boys. The May issue of Bon Appetit magazine had a recipe for Pasta with Sun Gold Tomatoes, which looked perfect for a quick weeknight meal.

With 7 ingredients this recipe goes together very quickly. I was unable to find sun gold tomatoes, so I substituted cherry tomatoes as suggested by the recipe. I was easily able to find all remaining ingredients and made no other substitutions. I did double the recipe to serve my family of four, and did not add bread crumbs as a topping. I used 1 1/4 cups of reserved pasta water, which is less than double the recipe. Make sure to salt the recipe after adding cheese.

This recipe turned out well. It was a great way to use fresh tomatoes and my two boys were able to help me prepare the recipe. The dish has a slight kick due to the crushed red pepper, which my husband liked. This is a great quick recipe, perfect for a hectic weeknight meal.
