All You Chilled Chocolate-Peanut Butter Cookies



As I've stated numerous times before I have a major sweet tooth. I can only go a couple of days before I need to have something sweet. Most days its not just any type of sweet, its specifically chocolate. I'm not a huge fan of candy bars, but rather I prefer homemade chocolate treats. The July issue of All You magazine had a recipe for Chilled Chocolate-Peanut Butter Cookies, that appealed to my love of all things chocolate.

With only seven ingredients, this recipe goes together very quickly. As a side note, one of the ingredients is light corn syrup. I use this ingredient sparingly, and I know some people are sensitive to it, but I find it a necessary binding agent in a number of sweet recipes. The total prep and cooking time for this recipe is very short, less than 20 minutes. I made no modifications to this recipe and followed the recipe as stated. I found that it took slightly longer than the suggested twenty minutes of cooling time for the cookies to fully set in the refrigerator.

These cookies have a nice flavor provided by the toasted coconut. The recipe is quick to prepare and makes enough for a crowd (40 cookies in all). My two kids liked these cookies and I liked how easy to prepare they are. This would be great recipe for a bake sale.
