I am attempting to convince my dad to move to West Virginia. If you've read my blog for any given amount of time you will know that I don't talk about my dad often. It's not for a lack of devotion, but more about him being the only parent I have left. My mother died of brain cancer 2500 miles away from me when my oldest was 9 days old. She was only sick for about a year and I was pregnant almost the whole time. The reason I had my oldest son as young as I did was to try to make sure my mother met a grandchild before she became too ill. I strongly believe she lasted until he was born from sheer will power. My dad and I were always extremely close growing-up. He raised me as if I were a boy, we went to sports games, he taught me to throw a punch. I have never really been a girly girl thanks to him, but I am a very strong and opinionated adult woman. In January he went into kidney failure after refusing to go to the doctor for almost 20 years. He spent 2 months in the hospital 2500 miles away from me. I called him 3 times a day and all the hospital staff knew me by name from all my phone calls. He is now home and starting dialysis this week. Since my mother passed away he has lived by himself in an over priced one bedroom apartment. So everyday when I call him I remind him of how great my state is. Yesterday I finally felt a little bit of light at the end of the tunnel. I mentioned that he could take the train to Chicago and we could meet him and take the train all together the rest of the way. After a pause he said he would look into it. It's a start. My mother loved going to tea and most importantly delicious scones. Thinking of her I made a new recipe for Strawberry Scones from the May 2013 issue of Parade Magazine.

This recipe has 8 ingredients. I takes a total time of 30 minutes, 10 minutes of which is active and makes 8 servings. I did make a few changes to the original recipe. I made two batches of these, one gluten free and one regular. I found with both batches that they weren't very sweet. Now traditional scones are meant to not be very sweet. I am spoiled though and love a little bit of sugar in my scones since that is how my mother prepared them. If you are like me I would suggest doubling the amount of sugar to 6 tablespoons. Make sure to watch the scones, they will brown very quickly at the end and then start to burn on the bottom if you aren't careful. With the gluten free scones I would recommend adding even a little bit more sugar if you are using a gluten free all-purpose flour or better yet use coconut flour. Without the added sugar the gluten free scones had a slightly bitter taste. Finally, if you like lots of fruit in your scones I would double the amount of strawberries. I like my scones filled with strawberries so I added a lot more than the original recipe stated.

When these scones were slathered with homemade jam they were great. Without jam I found them a little low on fruit and the gluten free ones weren't sweet enough. If you eat them with jam they have the right amount of sugar though. My kids thought these were a little crumby since they had eggs. Traditional scones just have butter and heavy cream. I would consider these more of a biscuit.

  1. Seems like you and your dad had the kind of relationship me and my dad did. Mine just passed away 7 months ago and its still tough coming to terms with it. Saying I'll look into it is a big step. My mother has suffered with diabetes for as long as I can remember, more than 30 years and her kidney is also failing and I've been trying to convince her to live with me with no luck. Saying some prayers for your dad tonight and I hope he comes out to be with you. ((hugs))

    1. My mother had diabetes too, I know how hard it can be. Thanks for the prayers, I wish your mother the same :) I'm hoping that I can get him to move in the next 6 months. I know he's scared of moving so far, which I can understand. I just want to make sure that he gets to enjoy his grandkids (and me).

  2. Oh my goodness, you have been through so much. My family background isn't such a happy one either and I don't discuss them on my blog. I talk about my in-laws because that's a much more pleasant situation. My mom is severely diabetic and not really taking care of herself and I worry about it all the time. I hope for the best for your dad.

    1. I discuss my inlaws a lot more too for the same reasons :) My mother was diabetic also and was horrible about watching what she ate. Thanks for the kind thoughts!

  3. I hope your dad will come live by you - my mom died 6 years ago of cancer 1200 miles away and although she was in a coma she waited until I flew in and then passed away about 3 hours later. We can't get my dad to move from our home town and he really should, either by me or my brother (MN or OH not NY). Thinking of you!

    1. Your situation sounds very similar to mine :) I think part of it is that my dad has always lived in Seattle since he met my mother so it holds a lot of attachment to her. I can definitely understand that part of his fears!

  4. I hope he does. One of my biggest fears about being so far from home is being so far as my parents get older and not being there if their health starts failing. Being far from parents is really tough and sometimes I think it gets tougher instead of easier.

    1. It does get tougher I agree. I was only 23 when I moved so far away, so I didn't really think about it much. Then I got married and had kids and it costs a ton to fly home so it hasn't been an option. It would be easier if I cost at least drive!

  5. I hope your Dad will be convinced to move closer. It's always not easy when our loved ones are thousands of miles away. My Grandma lives in Hong Kong by herself after my Grandpa passed. I always think of her and miss her so much. These scones look wonderful. I love treats that are not overly sweet so I think these would be good for me. I would definitely take your suggestion and double the fruit if I make them. ;)

  7. Hurrah for bright starts! My one BIG regret (though I couldn't change it if I could because too many great things including my four children came from moving) was being away from my grandmother. When you're young it doesn't seem like a move away from family is a big deal. When you get older you see implications you never could have imagined.

    1. I have some of the same feelings. I was only 23 when I moved and going to grad school so I thought I would only be gone for two years. Then I met my husband in school and haven't left :) As you get older you realize how much you miss the things you left behind!

  9. I'm sorry to hear about your father. I too wish both my parents would move closer to me, I would love for them to be a part of my daughter's daily life. Plus I live by the ocean-who wouldn't want to move here!? Hope you can convince him.

  12. As soon as our heat wave breaks I will be back in the kitchen to try these. I love scones. Always have them with clotted cream! Prayers for your dad. I was blessed to have always lived on the same street as my parents! Dad has passed, but it is great having Mom just a few doors down, for her benefit as well as ours :)

  15. I love the way you write and I always read your blog-posts since I follow you with bloglovin even though I don't comment as much.

    I made these or at least something that resembled them (i didn't doubled the sugar quantity but I put a bit extra)following your recipe and I absolutely love them. We have strawberries in our garden and this was a great treat. I hope our dad will move closer to you.

I am better about comments at times than others, but I always read other people's blogs so I completely understand :) I'm glad that the scones turned out well, how much sugar you add really will depend on how sweet you want them.
