Pumpkin Spiced Pecans from Southern Living

Recipe for Pumpkin Spiced Pecans
Pumpkin Spiced Pecans

Before I had kids I never lost anything. Now it seems that every time I turn around something disappears in my house. This evening it was a 30 dollar library book. I have looked everywhere and can't find it. While in most people's houses it could be hiding behind a bookcase etc. Not in my house. I thrive on organization and could tell you exactly where everything is, everything except the library book. During the book search my husband did find an old iPhone under the seat of our car. We bought it last January used. It had 15,000 miles on it and was a rental car. I have cleaned that car top to bottom every week, but apparently the phone was stuck right up next to the under part of the seat. So my husband got to make a man's day by finding his email on the phone and telling him that his long lost phone was found. I still can't find the library book, but I'm hoping by my husband helping someone else find something lost that the universe can see fit for me to find the lost book. If not at least the day ended up with a good deed, even if it does remind me that I can't seem to find anything even if I have cleaned the same spot for almost a year. I also end the day knowing that I married a man that is sweet enough to spend two hours tracking down someone to return their lost phone. All in all the day is ending on a good note. My food posts have been a little sparse the last couple of weeks due to offline life. I'm hoping to get back into the blogging grove soon. This week I tried a new recipe for Pumpkin Spiced Pecans from the September 2013 issue of Southern Living.

This recipe has 6 ingredients. It takes 55 minutes of total time, 5 minutes of which is active and makes 1 1/2 cups of nuts. I did make a few changes to the original recipe. First instead of apple pie spice I used pumpkin pie spice. I didn't want to have to buy a spice that I don't use, so I substituted the pumpkin pie spice that I already had. I did not add the ground red pepper since my two boys aren't big fans. Make sure to stir the pecans frequently or they will burn. Let them sit for at least 10 minutes after they are done cooking to let them get fully crunchy.

These pecans turned out great. My whole family enjoyed them and they were the perfect blend of crunchy and spiced. I would suggest at least doubling the recipe, the 1 1/2 cups didn't last long at all. These would be a nice party snack or just a fall treat.

  1. I hope you find your book. There's nothing worse than paying for something and then it shows up later. It's probably right within sight and you just can't see it. I've searched my house upside looking for something before and it was right there in plain view. Hubby sounds like an awesome guy! That person probably had bought a new phone as well but that was so nice of him. I'm going to pass on todays recipe. I'm allergic to nuts. :(

    1. I finally found it behind my stove! I only thought to look since I was cooking and reading one day last month :) I was so happy to find it! Nut allergies run on my mom's side, so I understand completely! My family is full of allergies, some of which I was unfortunate enough to have inherited!

  2. I'm the same way, I never lose anything but in the rare instance that I do, I drive myself crazy looking for it. I will say that twice now, I've been accused by the library of losing books that I actually returned and then THEY misplaced it somewhere in the library afterward. That's pretty infuriating! I love these nuts. I've had a very similar recipe and they are just addictive!

    1. I spent 3 hours this morning looking for the book :) I looked everywhere and finally found it in the last place I looked - behind the stove! I had the library at my undergrad shelf books without checking them in all the time. I started having them check the books back in while I stood there and give me a receipt. They would comment, but I wasn't going to pay for another book that they forgot to check in :)

  3. Oh my, I always, always lose things. Sometimes, I find things I have forgotten I had in the first place.
You have such a kind husband.
And I love nuts! Maybe I can do this with peanuts and walnuts, too.

    1. It would definitely work with peanuts and walnuts. I change up the type of nuts in recipes all the time, since there are some nuts that I like better than others.

  4. Oh no - I am sure the book is there somewhere. I am the same way, though. I always knew where everything was before kids, but now that they made such a mess out of my formerly neat & organized home, everything gets lost.

    1. I was finally able to find it, which was a huge relief! I feel you with not being able to find anything with kids, my kids put things in the strangest spots :)

  5. The book will be found, I know because it happens to me all of the time. My husband is clean nut and he rarely loses things. Where do you buy apple or pumpkin spice because I want to make this, this coming week-end. I might have to look for it at Whole Foods.

    1. I found it :) You can buy both apple pie spice and pumpkin pie spice at most supermarkets. If you can't find it you can always make the mixture yourself. They are both pretty easy to put together and use a combination of similar spices. At my local store they have three brands of each, even one which is generic which is nice since it takes me a while to go through it.

  6. Your recipe hit me on the right day -- I'm thinking of making some sort of spiced chex mix with nuts. This sounds like it has possibilities!

    1. My husband claims I read neardy books :) A lot of sci-fi and non-fiction medical and cultural geography books. I also love the classics and have re-read some of my favorites 10 or more times. I blame being a English lit and geography major :)

  9. This reminds me a lot of roasted walnuts that I used to have as a kid. We used to crack hundreds of walnuts under our huge tree and then roast them in brown sugar. Delicious!! I wish I could remember the exact recipe.

    1. We have a walnut tree in our backyard :) This recipe would work with walnuts also, which ever you have on hand. I bet the fresh walnuts with brown sugar were delicious!
