As I have discussed numerous times before I live with three males (my two boys and my husband). My boys are both very tall and thin (like my dad) and eat all the time. I think by the time they are teenagers I will just go to the butcher and purchase the whole cow cut-up (you can do this and it's awesome for big families!).  All three of the males in my house are big meat eaters, especially pork. However, I am the odd one out. I was a vegetarian for over 10 years and eat two out three meals everyday without meat. I am attempting to convince the rest of my family that vegetarian food can be just as delicious and filling as meat. It has been an uphill battle, but I'm still trying. I'm particularly adamant with my husband since his father had triple bypass just a few years back. Adding more plant based proteins is always a good idea for heart health.  This week I tried a new recipe for Tofu and Veggies with Peanut Sauce from Redbook magazine.

This recipe has 12 ingredients. It takes 45 minutes of total time, 30 minutes of which is active and makes 4 servings. Make sure to fully squeeze all the water out of the tofu. It really has to be pressed firmly or the tofu will not crisp up in the oven. Even with all the squeezing I found that my tofu needed 30 minutes in order for the vegetables and the tofu to fully brown. Additionally, I used the whole eggplant instead of half. My family loves eggplant and I didn't want to waste the other half. Finally, I chose not to add the chopped peanuts on top. Honestly, I forgot and it was fine without them. 

I was so happy with how well this recipe went over with my family. My husband and kids loved the tofu and eat their entire servings. The only change my family would make was to add another vegetable besides the green beans. My oldest loves green beans, but my husband would have preferred another vegetable or just additional eggplant. Overall, this was a great vegetarian meal option and something I would make again.

  1. I've been a vegetarian for as long as I can remember. My mom used to make me eat my meat when I was a kid, and it was always such a battle. I didn't like meat even then.

    Everyone else in my house eats it, so I cook it everyday, but honestly if I didn't have to cook it, I wouldn't be sad. ;)

    1. My mom tried to make me eat meat growing up too :) She finally allowed me to be a vegetarian in high school though. My family wouldn't do well without meat entirely though, my husband goes a little crazy if he goes more than a couple days without some form of chicken, fish etc.

  3. Sounds almost like my house. We're all big meat eaters except for my daughter who is a total vegetarian and my youngest Madison who doesn't like meat either. I think she may be vegetarian as well. I'm sharing this one with my daughter because she is always looking for new recipes to try.

    1. You're a great mom for allowing them to have their own food preferences towards meat! My mother was the same way, she cooked me vegetarian meals in high school. My dad was a huge meat eater though and wouldn't touch tofu :)

  4. I wish my family would eat more meat. Even my husband is fussy. None of us in the house like pork. My husband will eat burgers, but not steak. Same with my nine year old. My step son loves steak, but I won't make it just for him. Needless to say, we eat a lot of poultry.

    1. I'm lucky that my husband and kids aren't picky at all with cuts of meat. They will pretty much eat anything, which makes it much easier to pick out recipes! I think it would be hard for you with so many different picky eaters in the house :)

  5. We like tofu and peanut sauce is one of our favorite things to put on it. We don't eat a lot of meat here, and we always observe Meatless Monday. We've done that for years. I don't love red meat, but occasionally a really good steak is fine. :)

    1. Me too, and I agree that peanut sauce and tofu are great together! We do meatless dinners at least once a week, sometimes more. My husband is slowly coming around :) When I first met him he never ate tofu etc, so he has learned pretty well.

  6. I am odd woman out too....I have two boys and a husband. All of them are big meat eaters too. I try without success to convince or tempt them with dishes without meat.
    I would devour this great meal. Looks wonderful.

    1. It's fun being the only woman in the house (except for the burping and everything else! :) I try without a ton of success either, but I keep at it since I know that it's better for them!

  7. I have never tried peanut sauce before, but I imagine it tasty. I like sweet sauces. As far as being vegetarian...I couldn't as long as there is prociutto. :) ela

    1. Peanut sauce is really good I love it with tofu, chicken, pork you name it! I don't think I would do well as a vegetarian now, I like chicken too much :)
